The no dead end mode just means you can't get into a situation where you have no way of winning (e.g. by losing one of the three treasures). You can still die.

That's not a bug I'm familiar with, unfortunately. The mouse starting out in that position is normal, but it should only disappear if you move it above the menu. You could try changing the graphics setting or playing it in a window, but I really have no idea if that would help.

For the clicking, the issue is that the hotspot for that cursor is the spout rather than the center of the teapot. If you aim the spout where you want to click, it'll work. It's not really possible to make it visible on the character. There are many, many frames of animation, and it would need to be manually drawn onto each of them. Doing dishonorable things is still dishonorable even if no one finds out.
However, IIRC, the remake has enough potential for Paladin points that even if you lose some there, you can still have enough to qualify.

My version of QfG4 has a QG4INST.EXE for changing the settings. I'm not sure if yours does, but if so, try using that instead of the INSTALL.BAT. Under Windows, the saved games are in the game's installation folder. That'd be something like "C:\Program Files (x86)\AGD Interactive\King's Quest II".

I'm not aware of any plans for future AGDI games, though many people involved in AGDI are also involved in Himalaya Studios , which does have a game in development. Unfortunately, this seems to be an issue with AGS, the engine used to make the game. For actually playing the game, you just need some way of moving the cursor and clicking on things, so that trackpad would work fine there. It just isn't giving you the opportunity to attempt that. That's not something I ever encountered; I wouldn't have thought it possible. According to this guide, day 12 is the earliest it can be done, but you actually have until day 16.

That sort of things usually means you're not hitting the hotspot of the cursor on what you're trying to click. The hotspot is the red dot; on the talk cursor, it's at the base of the speech bubble. Make sure that's over the character you're trying to click on.

The original AGI game did allow you to get them in any order, but the SCI remake (which AGDI's remake is based on) requires you to get the shield last. It's debatable which was the better design, but either way, it wouldn't be the only thing in KQ1 that fails to stand up to modern scrutiny.
