I might just be stupid here, but how do I get past the weights? I see that there are 3, but only the little one and the big one have shown up individually for me. Am I doing something wrong or am I just having really bad luck waiting for the middle weight?

The weights are picked randomly. No need to wait, just make certain your weight remains properly adjusted as you get closer to the center of the bridge.

I'm at the middle of the bridge, with the potions all used up and everything I do kills me when I move to either end. There are no more weights appearing and no more potions to change my weight.

Did you carefully check the map you got from the captain? That "silly scribling" (as he calls it) is actually kinda important.
