If this has been asked before I apologize, but I looked over the whole board and FAQ and didn't see anyone else asking this.
1. Why does Graham use a sword when the entire KQ series (Not counting KQ8, of course) was about using your head to get out of trouble?
2. Why did they make the vampire look like Ludwig the 2nd? Doesn't he already have it bad enough, having been a werewolf already in Gabriel Knight 2, and being called mad by everyone???

I don't know about the second question, so I'm just going to respond to the first. Graham does use his head throughout the enitre game even when equipped with the sword, and he can solve the puzzles through non-violent means too. Killing the wolves or the lion with the sword were probably alternative solutions to prevent dead end situations for those who can't think up a non-violent way.
In his other adventures (KQ1 and KQ5), Graham was more or less thrusted into a quest with little or no preperation. In KQ2+, however, he sets sail to Kolyma himself and it would make sense to at least go there with a means of defense.
As for Caldaur...AGD1 lived in Germany for a while and picked up plenty of info about Ludwig II there and she thought it was nice to model Caldaur after him. I don't think GK2 played a part in it.

Yes, I knew about weapons in the other KQ games, but you didn't have to use the weapons in those games, and I didn't know it was possible to not use the sword in KQ2VGA.
As for the GK2 thing, I was just kidding. But I know I'd find it a little annoying if I was dead and people were calling me mad, having vampires designed after you, and someone making a game in which you're a werewolf. Interesting how he didn't know about Ludwig the 2nd being featured in GK2, a series created by the co-writer of KQ6.

As a point of historical interest...
Graham originally HAD to kill to the wolves. After the game was released, and the next version in the works, I realised that it was too violent for Graham. (I never stop editing. Ever.) So in went the "preferred" method of dealing with the wolves, and (as with the original KQ2) left the sword option as a fallback stategy.
